Moscow Mule Pops

Have a cool refreshing popsicle that hits just the right spot.

Moscow Mule Pops


    for the ginger syrup­
  • 1?3 cup sugar
  • 1?3 cup water
  • 2­inch ginger sliced thin
  • for the popsicles­
  • 1?2 cup (2 oz) vodka
  • 1?3 cup ginger syrup
  • 1 12 oz bottle non­alcoholic ginger beer Juice of 2 limes
  • Fresh mint sprigs


    for the ginger syrup­
  1. Combine the water and sugar in a small pot, heat until the sugar is fully dissolved. Add the ginger to the pot and let the mixture steep for at least 30 minutes.
  2. for the popsicles­
  3. In a pitcher or batter bowl, combine the vodka, ginger syrup, ginger beer, and lime juice. Pour the mixture into popsicle molds. Add a fresh mint sprig to each mold. Freeze for several hours or overnight, until the popsicle has set.
