Bring the tropics to your tummy with this pineapple whip dessert!

(Pineapple) Whip, Whip (Ba) Nae Nae


    for the banana flambe
  • -1 ripe banana
  • -¼ Cup raw Sugar
  • -Banana Leaf (as a bed)
  • for the pineapple whip
  • 1, 20 oz can crushed pineapple
  • 1 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice
  • 1 tbsp Castor or extra fine sugar
  • ¼ Pint of Whipping Cream
  • for the whipped cream
  • ½ pint of whipping cream
  • 5 oz of pureed pineapple
  • Rind of 1 lime (optional)


  1. Blend all your Pineapple Whip Ingredients except for your whipping cream
  2. Pour into a bowl and put into the freezer for at least 30 minutes (this will help the ice cream freeze better)
  3. Meanwhile, whip your whipping cream until you get soft peaks
  4. Once your pineapple whip has chilled a bit, incorporate it into your whipped cream
  5. Then add the mixture into your ice cream maker for 10-15 minutes
  6. Meanwhile, we’ll make a whipped cream, by adding 1 pint of heavy cream, 10 oz of pureed pineapple, and the rind of 1 lime (optional) into a whip cream charger
  7. **You can also make the whipped cream with a hand mixer or buy store bought Reddi-Whip
  8. to Serve
  9. Next, slice 1 banana on a bias
  10. Place your banana leaf down onto a plate
  11. Put a ring mold in the center of the leaf and begin to add your banana slices, leaving a 2” hole in the middle
  12. Sprinkle on 1-2 TBSP of sugar
  13. Remove the ring mold and flambe banana
  14. Once your ice cream has finished, take one heaping scoop and lay it in the middle of your banana
  15. Top with your whipped cream
  16. Garnish with lime zest!
