Tropical Toast in the middle of winter … is exactly what you need in your life 🙂
- 2 slices bread
- ½ cup coconut yogurt
- pineapple, peeled cored and sliced (amount tbd)
- ½ a mango, peeled and sliced
- 1 kiwi, peeled and sliced
- shredded coconut
- zest of half of a lime
- Toast the bread.
- Add a big dollop of coconut yogurt to each slice of bread, spread out evenly.
- Top the yogurt with alternating slices of pineapple, mango and kiwi.
- Sprinkle coconut over the top of the fruit.
- Zest lime over the top of each toast.
- Serve immediately.
