Coconut Pancakes

Time to get Tropical with your breakfast, with these delicious coconut pancakes! Made with Organic LouAna Coconut Oil 🙂

Coconut Pancakes

Yield: 6-8 pancakes

Ingredients

    for the Pancakes
  • 1 ½ C AP Flour
  • 2 tablespoons blonde coconut sugar
  • 4 teaspoons baking powder
  • 1/8 teaspoon salt / pinch
  • 2 eggs, beaten
  • 1 ¾ cup Coconut milk
  • 1/4 cup LouAna Coconut Oil
  • Shredded & Toasted Coconut Flakes
  • for the Coconut Whipped Cream
  • 1 can full fat coconut milk, refrigerated for 24 hours - leave in fridge
  • 1-2 tbsp white granulated sugar
  • 1 vanilla bean pod

Instructions

    To Make the Coconut Whipped Cream
  1. Remove your chilled can of coconut milk from the fridge (be sure to not shake it)
  2. Turn upside down and scoop out the thick top layer into a bowl. Whisk until it loosens.
  3. Then slowly add your sugar and vanilla, and mix.
  4. Continue whisking (by hand or blend with a mixer on high speed for 1-2 minutes) until light and creamy.
  5. To Make the Pancakes
  6. First mix your dry ingredients (flour, baking powder, salt, sugar) together in a large bowl
  7. Now in a separate batter bowl, add your room temperature eggs, coconut milk, and beat together.
  8. Pour your wet mixture over your dry ingredients, and start to just roughly combine together
  9. Now it’s time to add your LouAna Coconut Oil – by adding at this point, it makes sure that your coconut oil fully emulsifies, which ensures the smooth pancake texture that you’re looking for.
  10. We’re using a decorating pen for our batter, so we can make fun coconut illustrations.
  11. You’re going to fill that as well as a squeeze bottle with a thicker tip with your batter.
  12. Into a griddle, add a small spoonful of LouAna Coconut oil.
  13. First, with the pen, draw a border ¼ “ around the edge
  14. Add three small dots near to the side of the pancake
  15. Wait 2 minutes as the heat comes up and the batter takes on color
  16. Now sprinkle inside the circle with toasted coconut flakes,
  17. And fill the rest of the pancake with batter
  18. After 1 minute, flip your pancakes and continue cooking for another minute before removing
  19. Serve by laying down a bed of your coconut whipped cream, some coconut flakes, and then lay your pancakes right on top!
